Favorite Holiday Recipes - Pumpkin Spice Bars

It's November and that means Deb's planning when to bake her famous Pumpkin Spice Bars!

Here's the recipe:

Pumpkin Spice Bars

Ingredients

4 eggs
2 cups sugar
1 cup vegetable oil
1 15 oz can pumpkin (not pumpkin pie mix)
2 cups unbleached flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves

Cream Cheese Frosting

Ingredients
2 8 oz packages cream cheese, softened to room temp
1 stick of butter, softened to room temp
Zest of half an orange
2 to 3 teaspoons milk (or substitute fresh orange juice)
1 tsp vanilla
4 cups powdered sugar (sometimes I use more if I want it stiffer)

Heat oven to 350°F. Spray 15x10x1-inch half sheet baking pan with non-stick spray
In large bowl, whisk eggs, sugar, oil and pumpkin until smooth. Stir in flour, baking powder, baking soda and spices. Spread in pan. Bake 25 to 30 minutes. Cool completely

Beat cream cheese, butter, milk (or juice) and vanilla with mixer on low speed until smooth.
Gradually add in powdered sugar, a cup at a time, on low speed until smooth and spreadable.

Try not to eat them all yourself!!
